PEMANFAATAN STEARIN KELAPA SAWIT SEBAGAI EDIBLE COATING BUAH JERUK MEDAN (Citrus sinensis L.)

Pada umumnya produk-produk pertanian memiliki sifat yang mudah rusak, tidak tahan dalam jangka waktu lama dan tetap melakukan proses respirasi setelah dilakukan pemanenan. Salah satu cara untuk memperpanjang umur simpan adalah dengan coating pada permukaan buah-buah atau produk hortikultura lainnya. Coating merupakan salah pengawetan diaplikasikan dibentuk secara langsung bahan pangan. Stearin hasil samping dari pabrik pengolahan minyak sawit masih sangat terbatas penggunaannya sebagai . fraksi mengandung asam lemak tersusun atas trigliserida jenuh. Jeruk Medan jeruk berasal Sumatera Utara termasuk varietas siam ciri-ciri berukuran sedang, tangkainya kuat, bentuknya lebih pipih gepeng, kulitnya tebal rasa manis serta bentuk bulir besar. Penelitian ini bertujuan memanfaatkan stearin kelapa edible buah Medan. Hasil penelitian diperoleh terbaik kadar vitamin C naik penyimpanan 0 hari 5 yaitu sebesar 3 mg/100 gr pencelupan %, 0,1% 0,2%. Sedangkan susut bobot tanpa hanya mengalami penurunan 0,01%. Penurunan paling besar terjadi 15 mencapai 0,09%.
